Single origin bean-to-bar grown in Malekula, Vanuatu. Made from cocoa butter pressed from Bougainville beans. Spencer Cocoa is Australian chocolate, made in Mudgee using cocoa beans grown in Vanuatu. Luke Spencer visits his growers in Vanuatu twice a year to catch up and select the new season beans. He buys directly from a small group of families who grow, harvest, ferment and dry the cocoa ready for shipping to Australia. Back in Mudgee he roasts, grinds, conches, and tempers the cocoa into beautiful chocolate.
